VERMOUTH
Aromatic wine.
COMPOSITION
- Wine is the base of vermouth and it usually represents 80% of its total volume. The white wine has to be dry and neutral.
- Addition of aromatic plants such as cinnamon, cinchona, coriander, gentian and bitter orange.
- Addition of sugar to diminish its acidity.
- For red vermouth: addition of caramel.
HOW TO DRINK
In general vermouth is drunk as an aperitif with ice cubes or with gin.
Occurs quite frequently in the preparation of cocktails.
